Ever since I've been introduced to eggplant, it has always been in my fridge. You can make it so many different ways and add it to so many different meals. It's a great meat substitute on my end. My favorite is battered fried/baked eggplant. It's a quick and easy snack to throw together on a busy day or a snack for the kids. It is also great to have on a party tray for when you have a little gathering with some friends.
Make it into a sandwich!
To make you will need:
Half an eggplant (more if you'd like)
2-3 cups of oil (for frying)
1 1/2 cup of flour
1 cup of water
1 tsp of garlic powder
1 tsp of onion powder
1 tsp parsley
1 tsp of oregano
1/2 tsp paprika
1/2 tsp salt and pepper
Tomato sauce of your choice
1. In a large bowl mix together the flour and all the dry ingredients so they're thoroughly combined.
2. Add in the water and mix until it ends up a little thinner than pancake mix consistency. You can add a little more or less water if you need too.
3. In a separate plate pour out 2 cups of breadcrumbs. Dip the eggplant pieces in the batter and tap off the excess, then drop it into the bread crumbs. Make sure the eggplant is coated evenly with the bread crumbs.
4. Once all your eggplant is battered and coated in breadcrumbs, heat up a shallow pan or a pot with about 2 cups of oil. When its hot enough drop in the eggplants and cook for about 3 mins on each side until golden brown. Add a dash of salt and pepper on the top and you're all done! Its that easy!
(For baking: Heat oven to 425 degrees and bake for about 25 mins, flipping halfway through.)
