Chocolate Brownie Cookies
MMMMMM.... Yes you read that right, these are 100% VEGAN, fulfilling your chocolaty cravings :)
These brownie cookies are rich, super chocolaty and will satisfy even the biggest chocolate lovers, including myself. They're crisp on the edges but very soft and moist on the inside. I've tried a few of these recipes and this one is the one that worked for me. I used bananas in this recipe in place of eggs. You can use any replacement of your choice.
10 oz of semisweet vegan chocolate. chopped
4 tbs unsalted butter
3 ripe bananas (egg replacement)
1 1/2 cups of sugar
1 tsp salt
1 cup flour (sifted)
1/2 tsp baking powder
One 12 oz bag of vegan semisweet chocolate chips or cacao nibs.
1. Melt one pound of chocolate with the butter until smooth. Set aside. In a large bowl mix together the sugar, salt and bananas. I added a teaspoon of honey of the mix. Using s spatula fold in the melted chocolate until it's well combined.
2. Sift the flour into the chocolate mix and add in the baking powder and mix thoroughly. Mixture will be a little more runny than cookie dough.
5. When everything is well mixed, cover with siren wrap and let it chill in the freezer for at least an hour until it gets firm enough for you to scoop.
6. Preheat the oven to 350 degrees and line your baking sheet with parchment paper. (I didn't have any on hand but i recommend you use it for and easy clean.) Scoop 2 tbsp size mounds of dough on the baking sheet and place them 2 inches apart from each other. Bake for about 10 mins and place on a rack to cool before serving.
